In Week 4 of my kitchen renovation, I am discovering the wonders of cooking on a hot plate.
Lately, dinners at my house have consisted of quick and easy microwave meals, one skillet wonders, and lots of praying my picky eaters will just gulp it down without making a mess.
Add to the chaos the fact that we have a toddler with allergies and my husband and I follow a Keto/low-carb lifestyle, and it makes meals at my house challenging.
I’ve been eating lots of salads and throwing whatever meat I sauté for the kids into my salad mix. Lately though, I’ve been craving pasta, an absolute no-no for anyone on a low carb diet.
And then I found kohlrabi pasta.
Yes, right there next to my salad mixes and zucchini noodles in the produce section. Kohlrabi noodles are awesome because they have a starchy texture, and more closely resemble something like pasta than a mushy zucchini noodle.In fact, kohlrabi is a type of cabbage. Raw, the noodles resemble thick ribbons of linguine. Suggested servings on the bag recommend adding butter and cream to the kohlrabi in a skillet or making a pesto pasta while the cabbage is steaming hot.
The directions said I could steam the kohlrabi in the microwave right in the bag or sauté it for 5 to 7 minutes in the skillet. I chose the latter, and sprinkled the noodles on top of shrimp and sliced peppers, onions and diced tomatoes I had been sautéing for 10 minutes.
I added my herbs, a sprinkle of salt and pepper, and my Young Living Basil and Oregano Vitality Essential Oils.
This dish will make ya mama go keto. Kohlrabi pasta has about 9 net carbs and it’s a satisfying alternative to pasta any day.
Quick Keto Shrimp and “Pasta” Dinner
Ingredients:
3 pounds of shrimp
1 package of Kohlrabi Linguine
1 can of diced tomatoes
1 package of frozen stir-fry peppers and onions
2 teaspoons of minced garlic
1 teaspoon of onion powder
1 teaspoon of garlic powder
Salt and pepper to taste
4 drops of Young Living Basil Vitality oil (to purchase oils go here and use my sponsor/enroller number 13705454.
2 drops of Young Living Oregano Vitality Oil
Cooking Instructions:
Pour 2 tablespoons of olive oil to the skillet on medium heat and let the oil warm for 1-2 minutes.
Add cooked shrimp, frozen stir-fry mix, and diced tomatoes to the skillet. Add spices, minced garlic, and stir the mixture. Put a top on the skillet and let the mixture simmer for 10 mins on medium heat.
After ten minutes add the kohlrabi to the shrimp and vegetables, storing the blend until the kohlrabi is coated with the tomato sauce. Recover the skillet and let simmer for 10 minutes on low, stirring occasionally.
Serve immediately and enjoy!
