On the DAIRY-FREE SHOPPING LIST: ALMOND AND COCONUT REDDI WIP WHIPPED CREAM
I can’t think of one person who DOESN’T like whipped cream.
And if you’re like me, you keep your own personal can in the way back of the fridge, where no one realizes it is there. And in moments of boredom or standing with the fridge open with no idea of what to eat, you grab that can of extra-creamy whipped cream and just let the soft ripples undulate in your mouth.
Everyone does that, right?
Well, everyone in my house does, except for Baby Girl. But now she’s in on it too. Reddi Wip has come out with two non-dairy flavors: Almond Milk and Coconut Milk. And they are REALLY GOOD. Especially the Coconut Milk–it just has a velvety richness to it that doesn’t compare to the Almond version. Especially on top of my Fluffy Egg-and Dairy-Free Waffles. It’s rare that Baby Girl gets to enjoy a dairy-free version of what we’re eating that is actually good. She was diagnosed with at least 12 allergens when she turned a year old. Now she’s 3, and her list of allergies has narrowed to dairy, eggs, and cashews. Even so, those categories are still broad enough that I cannot be passive about her meals. I have to actively search out dairy, egg, and nut-free foods.
And they must taste good.
So this Reddi Wip is a win for my family, because it is really good. And it’s low in sugar. And it looks and flows out of the can just like the dairy version. When you look at them, you can’t tell the difference.
So now Baby Girl can have waffles with whipped cream and Vegan Hot Chocolate with extra spirals of froth and cream overflowing from her cup. She’s happy and that makes me a happy mama!
And if you need a good hot chocolate recipe, try this one:
Ghirardelli’s Vegan Hot Chocolate
1 1/2 tablespoon Ghirardelli Unsweetened Cocoa
1 1/2 tablespoon sugar
1 cup of non-dairy milk of your choice. We used Almond Milk.
Stove Top: Mix cocoa and sugar and set aside. Pour milk into a small pan. Add cocoa mixture and stir. Heat, while stirring and steaming. Add Almond or Coconut Milk Reddi Wip whipped cream to the top and watch your baby enjoy it.
Microwave: Mix cocoa and sugar and set aside. Pour milk into a mug or cup and heat on high for 1 to 1 1/2 minutes. Remove from microwave and stir in cocoa mixture. Add cocoa mixture and stir. Heat, while stirring and steaming. Add Almond or Coconut Milk Reddi Wip whipped cream to the top of the cocoa and try not to steal a squirt in your own mouth.
